Bolognese is a staple in both of our kitchens. It’s great fresh off the stove, even better after a few days in the fridge, and somehow at its best when you rediscover it in the freezer a month later— postpartum, starving, and very much not in the mood to cook. This version takes it up a notch by adding liver or your choice of organ meat, which packs in nutrients without compromising the flavor. The long, slow braise in this recipe mellows the liver flavor beautifully. Even if liver isn’t your thing, try adding just a small amount. You won’t ruin the dish, and you might just surprise yourself.

This version takes it up a notch by adding liver or your choice of organ meat, which packs in nutrients without compromising the flavor. The long, slow braise in this recipe mellows the liver flavor beautifully. Even if liver isn’t your thing, try adding just a small amount. You won’t ruin the dish, and you might just surprise yourself.

Method

  1. In a heavy-bottom pot or 5-quart Dutch oven over medium heat, melt the lard for about 2 minutes. Add the onion, celery, carrots, and 2 teaspoons of salt to the pot. Sauté until the veggies are softened and begin to caramelize, about 10 minutes.
  2. Add the beef, pork, liver, and another 2 teaspoons of salt to the pot. Break the meat apart with a wooden spoon and stir occasionally until cooked through and no pink remains, about 7-10 minutes.
  3. Pour the entire can of whole tomatoes into a large bowl, and by hand or with a masher, crush them. Add the tomatoes to the pot with the meat.
  4. Pour in the wine and bone broth. Bring the mixture to a boil and then reduce the heat to a simmer for 1 hour, stirring occasionally.
  5. Pour in the heavy cream and stir. Simmer for 10 more minutes. Use a spoon to taste and add salt in ½ teaspoon increments as needed.
  6. When done, it should be a thick, cohesive sauce similar to the consistency of loose oatmeal and not overly runny. Serve warm over cooked pasta of choice. Store leftovers in an airtight container in the fridge for up to 4 days, or freeze for up to 6 months.
