Method

  1. In a medium bowl, mix together the maple syrup, coconut flour, vanilla extract, 4 tablespoons coconut oil, collagen, salt, and 1 tablespoon water to form a thick “batter.”
  2. Stuff each date with about a teaspoon of the mixture and set aside.
  3. In a small saucepan over very low heat, melt the chocolate chips with the remaining tablespoon of coconut oil and coconut milk, stirring constantly with a rubber spatula so chocolate melts evenly.
  4. Working one at a time, dip the stuffed dates in the melted chocolate mixture and transfer to a plate lined with parchment paper. Sprinkle with flaky sea salt and any other toppings of choice.
  5. Refrigerate and serve chilled. Store leftovers in an airtight container in the fridge for up to 4 days, or freeze in freezer-safe container for 2 months.
