The base is just eggs and bone broth and the result is pure comfort. If you can’t find roe, don’t let that stop you! This dish is worth making anyway, and you’ll still get plenty of nourishing, umamipacked goodness.

This traditional Japanese steamed custard is gentle, savory, and soul-soothing—especially when nothing else sounds good. Traditionally made in a steamer, we found that gently cooking in a low oven temp gets you the same silky texture without the hassle. The base is just eggs and bone broth and the result is pure comfort. If you can’t find roe, don’t let that stop you! This dish is worth making anyway, and you’ll still get plenty of nourishing, umamipacked goodness.

Method

  1. Preheat the oven to 225°F.
  2. In a medium bowl, lightly beat the eggs. Slowly whisk in 1 ⅓ cups bone broth, soy sauce, and mirin until smooth.
  3. Pour the liquid through a fine mesh strainer into a separate bowl and discard the solids.
  4. Divide the mixture evenly between 4 (8-ounce) ramekins or bowls.
  5. Bake for 1 hour 15 minutes or until the custard jiggles when gently tapped on the side.
  6. Let the custard cool for 10 minutes. While the custard is cooling, whisk the remaining ¼ cup bone broth with the maple syrup and coconut aminos in a small bowl.
  7. Top each custard with a dollop of roe and a spoonful of the maplebroth mixture.
