We ditched the heavy roux and thickened the filling with gelatin and cassava flour; then swapped the puff pastry lid with a quick, fluffy cornbread. It hits all the right notes without sitting like a brick in your stomach.

Method

  1. Preheat the oven to 350°F. Prepare a 9-inch round pie pan or 8-inch square pan with cooking spray and set aside.
  2. Melt the butter in a sauté pan over medium heat. Add the onion, peas, any additional vegetables, and the salt to the pan. Sauté for 5-8 minutes until the vegetables are softened and fragrant.
  3. Pour the milk and broth into a medium bowl and sprinkle gelatin on top. Allow 1-2 minutes for the gelatin to bloom. Then, pour the mixture into the skillet and simmer for 5 minutes, stirring occasionally as it thickens.
  4. Whisk in the flour until completely smooth. Then, fold in the chicken, thyme sprigs, and sautéed vegetables. Mix until well combined. Taste for seasoning, then scrape the filling into the prepared baking dish, and smooth into an even layer.
  5. Make the cornbread topping: Mix together all of the topping ingredients in a large bowl until well combined. Carefully pour on top of the pot pie filling and smooth into an even layer.
  6. Bake for an hour until the filling is bubbling and the top is golden brown. Allow it to cool briefly before serving so the sauce can fully thicken. Serve with a dash of Tabasco and a drizzle of honey.
