KIDS NOTE: If your kids aren’t ready for spice, separate the batches at step 4 and omit the curry.
Letting rice cool creates resistant starch, a type of carbohydrate that resists digestion in the small intestine. This can help support steadier blood sugar, feed beneficial gut bacteria, and slightly reduce calorie absorption.
As a “new parent,” I subbed chicken thighs because they are good bang for your buck. Putting the lid on after you add the veg helps the squash slightly soften so you can cook it all together. Easy to pull together and super satisfying. The leftovers reheated well.
