This was one of my go-to treats during both of my pregnancies—it satisfied my sweet cravings without the sugar crash and even snuck in some protein. You probably already have all the ingredients on hand. Simple enough for a weeknight dessert but impressive enough to wow your friends. And no, you do not need a fancy flame throwing fire wand to caramelize the top; you can use your broiler.

You probably already have all the ingredients on hand. Simple enough for a weeknight dessert but impressive enough to wow your friends. And no, you do not need a fancy flame throwing fire wand to caramelize the top; you can use your broiler.

Method

  1. Preheat the oven to 300°F. Prepare 4 (1-inch deep) ramekins with cooking spray and set aside. In a saucepan over medium heat, whisk to combine the cream, vanilla, honey, and salt. Bring to just under a simmer then remove from heat.
  2. In a large bowl, whisk the egg yolks until well combined. Slowly pour the cream mixture into the egg yolks while whisking continuously. The mixture should be smooth with no lumps. If small lumps are present, strain with a fine mesh sieve.
  3. Pour the mixture into the prepared ramekins. Place the baking sheet in the oven then carefully pour hot water in the corner of the baking sheet, avoiding splashing any into the custard. Pour just enough water so that it reaches halfway up the ramekins.  
  4. Bake for 30 minutes until custards are set but still jiggle slightly. Allow them to cool for 2 hours at room temperature Then refrigerate overnight to fully set.
  5. When ready to serve, set your oven rack high and preheat the broiler.
  6. Sprinkle the top of each custard with 1 teaspoon sugar and transfer the ramekins to a baking sheet. Place the baking sheet with ramekins under the broiler, about 3 inches from the heat source, and watch closely until the sugar has browned and caramelized, about 15-30 seconds. Alternatively, you can use a culinary torch.
  7. Remove from the oven and allow the caramel on top to cool slightly and harden. Top with fresh fruit if desired and serve.

TESTER’S NOTE

I used muffin tins instead of ramekins and it worked great. It’s awesome to have a dessert that is protein rich - especially while pregnant!
