I learned to make proper fried rice from the late, great Charles Phan, who cheekily called it his “bachelor night” dinner—something to throw together when he was off duty, watching the game, and feeling casual but hungry. The big tip? Use day-old rice and fry the eggs first. I’m not living that bachelor life anymore, and during pregnancy duty I added a little extra love with greens and that crispybottom magic of a good bibimbap. Use whatever leftover protein and veg you have on hand. My original name for this recipe was “Empty the fridge fried rice.”

Method

  1. Make the flavor slurry: In a small bowl, whisk together the ketchup, garlic, ginger, and liquid aminos. Set aside.
  2. In a large skillet over medium heat, cook the bacon until almost crispy, 4–5 mins. Remove with a slotted spoon, leaving the fat in the pan.
  3. With the heat still on, crack the eggs directly into the hot bacon fat. Scramble them in the pan and cook until just starting to crisp, about 1-2 minutes.
  4. Toss day old rice into the pan with the eggs, breaking up any clumps. Stir and toss until every grain is coated in fat and the whole mixture is flecked with egg. Press the rice into an even layer and let fry undisturbed over medium-low heat for 10 min to form that coveted crispy bottom.
  5. About 5 minutes into crisping, scatter broccoli and the veggies over the rice and cover the pan with a lid to steam until just tender.
  6. In a separate pan, heat the avocado oil and sauté the mushrooms and greens until softened. Then add them to the rice.
  7. Drizzle the flavor slurry over the rice and fold everything together, scraping up crispy bits from the bottom. Add the bacon and shredded chicken, and mix until well combined and heated through.
  8. Serve with green onions, cilantro, kimchi, and sesame seeds.

TESTER’S NOTE

I cooked the veggies a little longer for my toddler. Tasted great, reheated great!
