Some people love to talk trash about oats (phytic acid! antinutrients!), but we love them. A dry cup of oats packs in 10 grams of protein and around 8 grams of fiber; plus they’ve long been known to support lactation. This recipe is family-friendly, meal-prep-approved, and perfect for a weekly breakfast rotation. We call for soaking the oats overnight like muesli, which makes a big difference. Soaking (and later, baking) helps reduce phytic acid, improve mineral absorption, and makes the oats easier to digest. This makes a generous batch that reheats beautifully throughout the week and is also freezer friendly.

This recipe is family-friendly, meal-prep-approved, and perfect for a weekly breakfast rotation. We call for soaking the oats overnight like muesli, which makes a big difference. Soaking (and later, baking) helps reduce phytic acid, improve mineral absorption, and makes the oats easier to digest. This makes a generous batch that reheats beautifully throughout the week and is also freezer friendly.

Method

  1. Place the oats in a large bowl and cover with water. Soak overnight (at least 6 hours) at room temperature. Then drain and discard the water. (If using pre-soaked oats, skip this step.)
  2. Preheat the oven to 375°F. Grease a 9x13-inch baking dish with butter or cooking spray.
  3. In a large mixing bowl, whisk together the cinnamon, nutmeg, collagen powder, baking soda, and salt.
  4. Add the milk, eggs, ¾ cup maple syrup, melted butter, and vanilla. Whisk until smooth and well combined.
  5. Stir in the drained oats; then fold in the fruit.
  6. Pour the mixture into the prepared baking dish and spread it evenly. Drizzle the remaining ¼ cup maple syrup over the top, especially around the edges for crispy corners.
  7. Bake for 35–40 minutes, until the edges are golden brown and the fruit is soft.
  8. Let cool slightly before serving. Enjoy warm with a dollop of yogurt—or go rogue with a scoop of ice cream.
