This recipe comes from my cousin, Kylee, who affectionately referred my yet-unborn son as “Grouper.” She made this dish for me throughout my pregnancy, and while the baby nickname didn’t stick, this craveable, crunchy granola earned a forever place in the family. Method

  1. Preheat the oven to 250°F. Line two half-sheet pans with parchment paper.
  2. In a large bowl, combine the oats, puffed grains, nuts, seeds, coconut flakes, protein powder, cinnamon, nutmeg, and salt.
  3. In a separate bowl, whisk together the coconut oil, maple syrup, eggs, chia seeds, and vanilla extract until smooth and glossy.
  4. Pour the wet mixture over the dry ingredients and stir thoroughly until everything is well-coated. Let the mixture sit for 10–15 minutes.
  5. Spread the granola evenly across the two prepared pans—don’t press it down.
  6. Bake for 45 minutes to 1 hour, stirring once or twice, until golden and fragrant.
  7. Let cool undisturbed for 1 hour to crisp up. Break into chunks and store in an airtight container at room temperature for up to 4 weeks.
