Method

  1. Pour the water into a small saucepan and bring to a gentle boil over medium heat. Stir in the oats, chia seeds, and salt, then reduce to a simmer and cook for 2–3 minutes.
  2. Add the milk and continue simmering until the oats are tender and creamy, about 3–5 minutes more.
  3. Remove from heat and stir in the collagen, butter, cinnamon, and honey until fully incorporated.
  4. Serve warm, topped with a raw egg yolk and berries if desired. Or let cool and refrigerate in an airtight container for up to 5 days.

OVERNIGHT OATMEAL

  1. In a large mason jar, combine all ingredients except the fresh fruit. Stir well to fully incorporate.
  2. Seal and refrigerate overnight to allow the oats to soften and thicken.
  3. Serve the next morning topped with fresh fruit. Store in the refrigerator for up to 5 days.
