Inspired by the classic Korean dish popularized in the US by David Chang of Momofuku, bo ssam is slow-cooked pork that is caramelized on the outside, meltingly tender within. This version simplifies Chang’s method while keeping the flavor intact. The pork is seasoned overnight then cooks low and slow for about 5 hours. Hands-on time is minimal and the payoff is huge. Serve it family-style, letting everyone build their own wraps with lettuce, rice, kimchi, and ssam sauce—a savory miso-based sauce with gochujang for depth and umami. Bone-in pork has a richer flavor, but boneless works just fine if that’s what you can find.

Method

  1. The night before cooking, sprinkle the kosher salt and brown sugar all over the pork butt. Place pork into a large covered pot or sealable plastic bag. Refrigerate overnight, about 6-12 hours.
  2. Preheat the oven to 300°F. Remove the pork from the refrigerator and discard the juices. Line a roasting pan with aluminum foil, and place the pork fat side up into the pan.
  3. Bake uncovered for 4-5 hours, until the internal temperature reaches 195-205°F at which point the exterior is caramelized and the meat will easily pull apart with a fork.
  4. To make the ssam sauce: Place all the ingredients into a food processor or blender. Blend for 30-45 seconds until smooth.
  5. Serve warm with ssam sauce, kimchi, white rice, and lettuce leaves to make wraps.
