This recipe is inspired by one of our favorite seafood spots in San Diego—The Fishery, where we fell in love with the way they combine tender mussels with fragrant green curry and a rich, silky coconut broth. It’s simple, nourishing, and restaurant-level impressive, but comes together in under 30 minutes at home. We recommend using full-fat coconut milk without guar gum (like Native Forest Organic or Thai Kitchen’s unsweetened version). Guar gum can sometimes upset sensitive stomachs, especially during pregnancy. You’ll get a smoother, creamier broth with clean ingredients your body will thank you for. For the curry, we love Thai Kitchen green curry paste—widely available, flavorful, and free from funky additives. Method

  1. Warm the coconut oil in a Dutch oven or heavy-bottomed pot over medium heat. Add the leeks and cook until soft and translucent, about 3–5 minutes.
  2. Stir in the curry paste and cook for about 2 minutes, until fragrant. Pour in the coconut milk, white wine, and maple syrup and bring to a vigorous boil.
  3. Add the mussels all at once, cover, and cook for about 3 minutes, until the shells open. Remove the lid and reduce the heat to low. Using a slotted spoon, transfer the mussels to a serving bowl.
  4. Stir half of the basil into the curry sauce, then pour the sauce over the mussels. Garnish with the remaining basil and serve warm withcrusty bread.
