Method

  1. Preheat the oven to 375°F. Line a muffin tin with paper baking cups or lightly grease with cooking spray.
  2. In a blender, combine coconut oil, maple syrup, eggs, bananas, cottage cheese, and vanilla. Blend until smooth.
  3. In a medium bowl, whisk together oats, almond flour, psyllium, protein powder, baking powder, baking soda, salt, and cinnamon.
  4. Mix the wet ingredients into the dry until just combined, then gently fold in the blueberries.
  5. Let the batter rest for 5–10 minutes before scooping.
  6. Divide the batter evenly into the prepared muffin cups, filling each about ¾ full. Sprinkle tops with coconut sugar, if desired.
  7. Bake for 30 minutes, or until a toothpick inserted comes out mostly clean and the tops are golden brown.
  8. Let rest in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  9. Store in an airtight container in the fridge for 4–5 days or freeze for up to 3 months. Reheat in a toaster oven or microwave.
