Method

  1. Preheat the broiler.
  2. In a food processor, pulse the bread, garlic, parsley, and 2 tablespoons olive oil until coarse crumbs form.
  3. Arrange the shrimp in a small oven-safe dish—cast-iron or Pyrex work well—so they fit snugly in a single layer. Sprinkle generously with the breadcrumb mixture, salt, and pepper. Drizzle with the remaining olive oil.
  4. Broil on a rack about 6 inches from the heat for 7 minutes or until the shrimp are opaque and the breadcrumbs are toasted.
  5. As soon as it comes out of the oven, squeeze the lemon over the top.
  6. Serve straight from the pan over rice, spooning the garlicky oil and crispy crumbs from the pan over the top.

PRO TIP

Preheat the broiler for 30 minutes so the entire oven is ripping hot and heat hits the pan from all sides, not just the top.
