Method

MAKE TORTILLA STRIPS IN THE OVEN

Brush both sides of corn tortillas with avocado oil or tallow; then slice into ¼-inch wide strips. Spread in a single layer on a baking sheet and bake at 400°F for 10–12 minutes, stirring halfway through. Or, pan-fry in 1–2 tablespoons of lard over medium heat until golden and crisp.

  1. In an 8-quart pot, warm the chicken broth over medium heat. Meanwhile, blend the tomatoes, soaked chiles (if using), garlic, oregano, and salt until smooth.
  2. Stir the blended mixture into the warm broth, bring to a boil, then reduce to a gentle simmer. Cook uncovered for about 20 minutes, stirring occasionally, until the soup is deep red and fragrant.
  3. Stir in the shredded chicken and simmer just until warmed through, about 5 minutes. Ladle into bowls and finish with cabbage, radish, tortilla strips, cilantro, cotija, and onion.
