This is one of our favorite ways to give leftover roast chicken (p. 221) a second or even third life. The real stars here are the sauces: a punchy, nuoc cham–style dip and a creamy almond-miso–lime Thai-style sauce that, together or on their own, somehow make everything taste yummier. Fish sauce straight from the bottle can smell a little off-putting if you haven’t used it before—but trust us, once it’s mixed in, it’s a yummy secret weapon. Method

  1. Place the butter lettuce cups onto a plate or serving platter.
  2. Top each cup with shredded chicken, noodles, carrots, and cucumbers to your liking.
  3. Garnish each cup with sliced peppers if desired, mint, and cilantro.
  4. Serve with both dipping sauces on the side and a spoon for drizzling.

NUOC CHAM DIPPING SAUCE

Whisk together all of the ingredients in a small bowl except the chile until well combined. Sprinkle the chopped pepper on top. Serve chilled or at room temperature. Store leftovers in an air tight container or jar in the refrigerator for up to 1 week.

MISO-ALMOND “PEANUT SAUCE”

Place all ingredients in a blender, except the warm water. Blend on high until well combined. Slowly pour in the warm water until the sauce reaches your desired consistency. Serve cold or at room temperature. Store leftovers in an airtight container in the refrigerator for 1 week.
