These burritos are a lifesaver for on-the-go mornings, school lunches, park hangs, or during that hazy postpartum stretch when you need to eat with one hand. Wrapped in foil, they stay warm for about an hour, and they freeze beautifully for future meals. Just pop them in the oven ( foil and all) to reheat and go. I made a big batch for my sister after her baby was born, and she said they saved her more than once. Use any flour tortilla you like—if you’re gluten-free, we love Coyotas.

Method

  1. Warm a skillet over medium-low heat. Add the butter and melt, then pour in the eggs. Gently push them around the pan to softly scramble, 4–5 minutes. Set aside.
  2. In a separate skillet, fry the bacon until crispy, about 7 minutes. Set aside on paper towels to drain.
  3. Cut 12 sheets of aluminum foil into 12x12-inch squares. Arrange your burrito assembly line with cheese, beans, scrambled eggs, and bacon.
  4. Heat the tortillas: Warm a dry skillet over medium heat. Add one tortilla at a time and heat for about 30 seconds per side, until lightly browned in spots and flexible but not crisp. Stack warmed tortillas under a clean towel to keep them soft and pliable while you work.
  5. Spread a layer of refried beans on each tortilla, then top with eggs, bacon, and cheese to your liking.
  6. Fold the sides toward the center, then roll tightly from the bottom up, tucking in as you go. Wrap snugly in aluminum foil. Serve warm with salsa for dipping.
  7. Store leftovers in the refrigerator for up to 4 days. To reheat, remove the foil and microwave on high for about 1 minute. For longer storage, freeze the foil-wrapped burritos in a resealable freezer bag for up to 3 months.

Holy shit I love these things! I threw them in the toaster and fed myself, my wife, and still had a hand to hold the baby.
